Tomato, Mushroom, and Parmesan Quiche

I am a huge fan of almost any kind of quiche.  It is good almost any time of day and you can easily swap up the ingredients however you desire.  The other night it was getting late and I still had to throw something together for dinner so I decided to toss a quiche in the oven.  We gobbled it up and left 2 pieces for the next day.  Leftover quiche is still just as good as the first day;)

Ingredients
9 inch deep dish pie crust - thawed
optional - cooked crumbled bacon - (I used 7 strips)
4 eggs
1 1/2 cup milk
1 tsp nutmeg
1 1/2 cups shredded parmesan cheese
2 Roma tomatoes chopped
1 6.5 oz can mushrooms
salt/pepper

Directions
Whisk eggs and add all your ingredients minus the pie shell.  Then pour in your pie shell.

Preheat oven to 425 and bake for 15 minutes.  Then reduce to 355 and bake for 30-40 minutes longer until a knife inserted in the center comes out clean,.  Note that you want it to be set up and not jiggly.  Let stand for 10 minutes before cutting.

I always put my quiche on a sheet before baking in case of overflow since I always tend to add extra cheese ;)

Catfish, Cheese Grits, and Hush Puppies -- YUM


This is what  we ate for dinner last night.  I'm from the South....so Yes those are grits and hush puppies - cheese grits to be exact.  My family used to make grits or french fries whenever they fried up fish so I'm just passing it along.  I made fried catfish nuggets last night and just thought I'd share with ya what I used.
Basically I fried mine up with Crisco shortening - you know the big tub ones.  I really like it a lot better than regular oil.  You can either deep fry or turn them ONCE while you are frying if you choose.  Depending on the size I'd cook them no longer than 6 minutes total.  You really want your oil hot and the less over crowding in the pan the better for extra crispiness.  For my milk mixture - I used egg, milk, and hot sauce!  I dipped them in the milk mixture, then in a flour (1/2), Jiffy cornbread mix (1/2), creole seasoning, pepper, and paprika dry mixture.  I topped mine with some lemon juice once they were done frying and ready to eat.  Other than the frying mess...these turned out great.


For the cheese grits (for those that are interested)  I just used basic dry grits... (not the instant packets)  and when they were done and still pipping hot, I added some (a lot really) shredded cheddar to it and stirred it in really well.  I preferably like basic slice sandwich cheese in mine but was out.  If you like grits you have to try them with cheese!

As far as the hushpuppies...well those perfect little balls were well - I cheated on those!  I bought them frozen but I wish I remembered the brand because they were really good!

Note- I would make only what you will eat....leftover fish gets soggy and yuck.

Mayo:
Wipe your house plant leaves with mayo - they will shine up just like new or like you got them from a florist!


Potatoes:
To keep your potatoes from turning brown after you cut them, place them in a bowl of water until you are ready to use them!

Summer Salsa with a Kick

One thing I look forward to about Summer is visiting farmers markets to buy up some fresh produce.  While I haven't yet because of all the rain we've been getting, I did find a great buy on a bag of tomatoes!  So, I decided to pretend it felt like Summer and made some fresh salsa.  I have one of those slap-a-chop or some gadget like that.  It chops the veggies for me and mixes it all together.  If you don't have one it's no biggie.  Just cut them up yourself and mix it up - which might actually be quicker!  Anyways, hope you enjoy!  This has a bit of heat..so adjust down if desired.

Ingredients
chopped tomatoes - I used about 4 or 5 romas
1/4 cup chopped red onion
2 tbs chopped cilantro
5 tbsp chopped jalapeno (seeds removed) less for less heat
2 tbsp minced garlic
alot of Accent for taste
1 tbsp of red wine vinegar

Simple and Breezy Directions - Just mix it all together and give it a taste.  I normally use lime juice and fresh garlic when I make this but was out.  I serve mine with tostitos chips.  Enjoy!

Tuna Pasta Salad with Dill



This was delicious!  And it has one of my favorite ingredients ... cheese .. haha!  On another note it's a great dish that doesn't cost a lot.  I used a Starkist Tuna flavor packet that I have never had before.  I was origionally going to do roll ups but was out and decided to use pasta instead.  This is great for any of you having summer parties or potlucks (I so love potlucks)! Try it..and come back and let me know what you think!  Speaking of potlucks I have one to go to next week and I'm supposed to bring either a (green) salad or desert to go with pizza .... any of you have a great suggestion?  Let me know leave a comment!


Ingredients
1 packet of Starkist Tuna in Hickory Smoked flavor
1 8oz cream cheese cut into cubes - room temperature
1 8 oz box of spiral or seashell pasta cooked
2 tsp fresh dill
1 tbsp lemon juice
2 tsp dijon mustard
2 or more tsps of green onions chopped
peas - (optional) - I like peas with tuna..wierd? lol
1/2 tsp of pepper

Directions
Simply make your pasta as directed and while it's warm mix in your cream cheese until well coating your pasta then add remaining ingredients.  Now taste?  Missing anything if so add it according to your taste otherwise you are good to go!  Enjoy!
Great warm or cold.

Save Stuff!!!
Ham bones are great to save.  I save mine by wrapping them up in aluminum foil and freeze until I need them for good flavoring.  Usually for homemade beans like lima beans, stews etc.

Don't throw away that bacon grease!  I know it's not particularly good for you but it also adds GREAT flavor to beans or bacon gravy is the BOMB!!!  If you've never had bacon gravy over biscuits - you are missing out!  My mother in law makes up the best gravy ever. To store my bacon grease I just put it in a covered bowl and refrigerate until needed.

Oh Nuts! Review



Yum! Do you love nuts?  While I admit I don't like all types of nuts, one of my favorites is pecans!  I can literally eat these with coffee, desert or just plain and that's exactly what I did.
I recently received several products from Oh Nuts.  They not only specialize in nuts but also candies(wild assortment), coffees, gift baskets and much more.  If you are shopping for a gift or simply looking for something new to try, give Oh Nuts a whirl.

For my review I chose cinnamon pecans, German Coffee Cake Coffee  and Chocolate rugelach.  Sounds awesome already doesn't it?!  The cinnamon pecans were very versitile.  I actually ate some plain and used some for baking.  They are definitely on the sweet side.  They came in an air tight sealed bag which reseals after opening.  To my surprise they were mostly all whole halves of pecans, no crumbs and hardly any broken ones which was nice!

The German Coffee Cake Coffee  was among my favorites.  It smells and tastes great with a slight hint of Coffee Cake.  A winner in my book!  The coffee also comes in an airtight bag that reseals after opening to insure continued freshness. 

The Chocolate rugelach were surprisingly new and different for me.  I have never had them before.  They came in a sealed box which protected them from getting squished.  They worked well as a breakfast danish or as a desert as well.  I even dipped mine in my coffee.
I will defininitely be keeping Oh Nuts in mind whenever I'm in the need of a gift for someone.  Or when I have a flare for that German Coffee Cake Coffee!

Easy Lunch Boxes Review and Giveaway!!!



Do you wake up each morning and after a cup of coffee start getting the kiddo's lunches situated?!  I do this every morning.  It not only helps us live more economical but I like to know that it's a healthier version than what they could pick from the cafeteria.  We do this because at our particular school the kids get to choose what they eat.  For instance if $2.00 gets you a balanced meal or you can have bosco sticks and no parent is there to say otherwise...well...you get the idea.  Not only that but we have had far less illnesses this year because of it.  I recently had the opportunity to review Easy Lunch Boxes and I'm so glad I did.  You see even though I was making lunch for the kiddo's, I always knew in the back of my mind that I often put too much food in the bag lunch.  I have this habit of always wanting to make sure they had enough which was really too much.  The Easy Lunch Boxes are so ideal and convenient that I can't imagine it any other way.


For my review I received  4 storage containers and a lunch box.  I really love the storage containers because you can fit pretty much anything that you would normally put in a lunch such as a sandwich, yogurt, chips, fruit, pasta, and other lunch items in it.  Plus they help offer portion control with each item serving compartment which I needed.


They stay sealed through out the day for freshness plus you are using and buying less plastic baggies which is a win win!  They wash up beautifully and if you decide to use it for the office instead they are refrigerator, freezer, microwave and dishwasher safe.


The lunch box I received is awesome.  It's super easy to clean and all 4 of the storage containers fit inside of it like cake.  So, I will be keeping this in mind for any future picnics!  As far as lunches go, a single storage container takes up about a quarter of the room in the lunch box giving you plenty of room for a drink, napkins, hand sanitizer, spoons, or even a banana.  They are insulated so you don't have to worry about that yogurt getting warm and it's even big enough for an ice pack if you like extra cold.  While I emphasize on the size of the inside, it's also handy enough that it can fit inside a book bag.


The kids really enjoy their new lunch experience and I as well (no more squished sandwiches!).  Plus, we are helping the environment by living a little more greener.

Pear Syrup for French Toast

Want something new for breakfast?!  You gotta try this concoction I dreamed up.  It's actually very good and you could probably substitute other fruits instead of the pears if you like.  I used cinnamon bread from  the bakery at my grocery store but  you could just as well use plain bread for your french toast.  Plus, it doesn't take long to do!

Ingredients
1 cup Real Maple Syrup
1/2 stick of butter
1/2 cup sugar
Cinnamon to taste
about 3 pears - peeled and chopped



Directions
All I simply did was melt my butter and sugar in the microwave.  Add your cinnamon and taste ;) I stirred it up nicely then added my pears. Meanwhile warm up your syrup on the stove top and add you pear mixture to it.  I heated mine just until the pears were fairly soft and sweet.  And Voila!  Top this over your french toast for something a little sweeter and different.

Pigs N A Blanket!

This is one of the staples I grew up on.  Now I make it for my kids.  It's called Pigs n a Blanket.  It has 2 simple ingredients so if you are budgeting this is a great lunch for the whole family on the weekend.  I'm sharing this because I'm not sure if everyone has heard of this.  I asked my husband and he never even had them before.  So...here's a quickie meal even the kids can help you with.  All you need is a can of biscuits and a pack of hot dogs.
Preheat your oven according to your biscuit can directions.  Next, get out a baking sheet.  Pop open your biscuits and open up your hot dogs.  You may need to flatten your biscuits some to be able to roll them around your hot dogs.  Do each the same kind of way.  Here's a photo for you.

When you are done place these on your baking sheet.  You shouldn't have to spray your pan.  Not unless the biscuit can says you should.  Anyway, when you place these on your sheet it's important that they are not touching.  So, when your biscuit rises they won't get stuck together.

Cook according to biscuit directions.  Sometimes it may take a tad longer but basically about the same amount of time it would just take the biscuits to cook.  And Voila!  Easy Breezy Kid Friendly Meal!

 Don't you wish sometimes you could just buy 1 little stem of celery?!   Here's something that you can do to preserve the life of that big stalk you buy.  Wrap it in aluminum foil to keep it crisp longer.  No more rubbery celery for you.

Ever wish your frosting could go farther?!  Here's a trick to double the size of one container.  Put it in a bowl and simply whip it up with your mixer.  You should have plenty of frosting now!  What's your take?  Have you tried this?!
