Brownie Peanut Butter and Banana Pizza


First I will go ahead and say that this is a w-o-n-d-e-r-f-u-l dessert!!!  I first made this last year when we had a bunch of relatives over for Easter.  Only then I made it in a traditional brownie pan (instead of pizza).  I found this recipe while rummaging through some cookbooks that my mother-in-law found at a thrift store.  I don't know why someone didn't want it because it's got the yummiest desserts in it!
Since then I googled the recipe and it's quite popular.  Each one varies a bit but here's how mine went and if you try this you gotta come back and tell me how yummy it was!

Also, if you make this for Valentine's Day you could add strawberries or raspberries to it for some festive color!

Ingredients
1 box Brownie Mix
1 8 oz block of cream cheese room temp
1/4 sugar or more
1/4 cup creamy peanut butter or more
3-4 bananas sliced or fruit of choice
1/4 cup crushed nuts your choice
melted chocolate  for drizzle or syrup



Start by baking your brownie mix according to the box instructions.  Very lightly grease your pan.  You can either do this in a 12 inch pizza pan or brownie pan (either way the taste is the same).  Bake for about 20 minutes and cool.


Meanwhile blend your cream cheese, peanut butter, and sugar with a blender until nice and creamy.  I give it a taste and see if I want more peanut butter or sugar.


When your brownie is cool spread this mixture over the top like icing.  Then place your banana slices over the top, then your nuts, then your chocolate drizzle.






Serves about 12

You will totally Enjoy!  I eat mine with a big glass of milk!

Garden Vegetable Cream Cheese Pinwheels


When it's past lunch time and I find my self getting hungry I sometimes go just for a snack to tie me over especially if I'm really busy.  I tossed together these Pinwheels today.  But then I thought these would make great simple game day appetizers as well.

Have you tried this cream cheese garden vegetable variety?  I personally have had it sitting in the refrigerator for some time because it's not exactly a favorite in my house.  But I really liked in this roll-up.

4 ingredients.
Cream Cheese - Garden Vegetable Blend
Sharp Cheddar Cheese - shredded or sliced
Sliced Ham - (I used lunch meat)
Tortillas


Just layer them on your tortilla starting with the cream cheese then roll up and slice.  Some people wrap them in plastic wrap and refrigerate until firm but I don't bother.  I'm usually too impatient to wait and like to go ahead and throw down a few ;O
I thought the garden vegetable jived pretty well with the roll-up and it can't get any easier than that.


I actually liked the cream cheese garden vegetable blend better this way than I did on any bagel!  You can go one step further and add:
olives
tomato
red onion
cucumber
spinach
turkey or whatever you like to fancy it up.

Oven Cooked Pork Loin

















This is a nice and easy recipe.  You can change cooking times depending on how big your pork loin is and season how you like it.  Leftover are great sliced up for sandwiches.


Ingredients
3 lb pork loin

Seasonings
2 Tb garlic powder
2 Tb seasoning salt
2 Tb pepper
2 Tb thyme
2 Tb soul food seasoning (Emerils, generic, or substitute for your favorite spice)
2 Tb lemon peel (dried or fresh)
2 Tb rosemary (dried or fresh)
2 Tb oregano
2 Tb dry mustard
Olive Oil




















Directions
Preheat oven to 450.  Put all of seasonings in a bowl and mix.  Brush pork with olive oil.  Sprinkle all sides of pork with seasonings.  Place your pork on a grill rack lined pan fat side up.  (Or improvise, I just placed a grill rack one on top of a cookie sheet)  Bake for 10 minutes.  Then reduce oven heat to 250 and continue to cook until pork is done using a meat thermometer (approximately 1 hour or more).  When meat is done take it out of the oven and cover it in aluminum foil.  Let it rest for about 20 minutes before slicing.

Homemade Cocktail Sauce


One of our favorite appetizers to munch on during Football season or around the Holidays is Shrimp Cocktail.  If you've never tried homemade cocktail sauce it's definitely worth giving a whirl.  It is so much better than any jar sauce and you can adjust the heat according to your taste.  Here is how I make mine:


Ingredients

Ketchup
Horseradish (Jar Grated)
Hot Sauce
Worcestershire Sauce


Directions
Start with about 1/4 cup of ketchup.  Add 1 tsp of horseradish, about 7 dollops of hot sauce and 7 dollops of Worcestershire sauce.  Mix it all together and give it a taste.  If you like more spice then add a little more of the last 3 ingredients.  If it's too spicy just add more ketchup.   This takes about 30 seconds to make and is how we love to eat our shrimp!

I Need The Steam Team

If you live in the surrounding areas of Austin Texas and need any forms of  total cleaning or restoration in your home or business check out The Steam Team.  They really seem to know what they are doing.  For over 20 years they've specialized in cleaning and maintaining commercial and residential flooring upholstery, tile and more.

From their site you can gain valuable information regarding rug cleaning tips.  Have you ever spilt wine on your carpet, food, had animal mess or even mud?   With all the snow flying around and freezing temps we have been tracking in rock salt which leaves a yucky white footprint on the carpet.  It would be nice if they would come clean my carpets with the care they describe on their website!

The Steam Team is available 24 hours a day which is great for those all of a sudden leaky sinks, overflows, residential main break etc.  We actually have an unfinished basement and only when we get severely heavy rains does it leak a bit from the concrete.  It could really use their applied structural drying techniques and their advice so that we can really take a look at sustainability in the future.

Their do it yourself upholstery cleaning could have been to put to good use over the summer while we were at the Cabin on the lake.  One of the cousins came in from swimming and sat smack dab on the couch leaving a wet spot under him with Cheeto crumbs!  With Steam Team they treat your upholstery so that when life happens it minimizes the damage so you can have continued life out of your furnishings.

Ham and Red Potato Soup


For Christmas we baked a ham.  We opted for a smaller ham than in previous years because we usually have so many leftovers that we get tired of eating it.  Well, even though we bought a smaller ham we still were up to our eyeballs in ham!  So, once we had had enough of ham, ham sandwich's, ham omelet's etc.  I decided to freeze the rest bone and all (I use the bone to flavor dry beans).  I cut it up in cubes and froze it in ziploc freezer bags.
Then wouldn't ya know I get a taste for ham soup!  There is nothing like homemade soup.  Yummmo.

Ingredients
4 cups cubed cooked ham
2 to 2 1/2 lbs red potatoes cubed
1-2 diced celery stalk
1-2 small onions chopped
1/2 cup heavy whipping cream
1 stick butter
water
salt/pepper

milk and cornstarch for thickening


Directions
Place your potatoes in a pot of water (just enough to cover) and boil until slightly soft.  Then add your ham, celery, onion, and  heavy whipping cream.  Boil on medium-low for about a half hour or so until your celery and onion soften nicely.  Turn to a simmer and add your butter, salt and pepper.   

At this point after the butter melts, I give the broth a taste and add just a few spices.  I added a few dollops of hot sauce, garlic powder, and parsley flakes to mine.  I continue to let it simmer until ready to eat. 

At this point you may want to thicken it (I did).  Although hubby eats his with crumbled crackers which thickens his so it's really up to you!

Chocolate Covered Pretzel Treats


This weekend I had a sweet tooth and decided to make some early Valentine's Treats!  I did it 3 ways:

Chocolate Covered Pretzels with Sprinkles

Cherry Covered Pretzels (using Cherry Frosting)

Chocolate Covered Pretzels with Coconut

These were yummy!  However, I'm not much of a cherry fan :0  The coconut ones were my favorite!  For the frosting or chocolate (we used mini chocolate chips) just nuke in microwave and dip!

New Year's Resolution - Eat Breakfast Everyday




To kick start my New Year, I have a goal.  I will be trying new things but one of which will be to eat breakfast everyday this year.  The old saying "breakfast is the most important meal of the day" just might be true all depending on what you are eating I guess. 

I have found that when I do eat breakfast, I am less grouchy, more focused, and ready to take on the day.  I am bad about skipping meals.  I skip less when everyone is home to eat with me and more when it's just me.  I guess I'm a social eater?  I've never thought of it that way.

For this New Year's Resolution, I will share ideas to add some variety at the breakfast table.  Here are a few things I have come up with.  Feel free to suggest yours in the comments!  Keep in mind that these are just my ideas to keep variety in the year to come that I will be using.  Some are good for on the go and some are good for quality sit down meals. 



1.  Fried eggs with bacon and toast.

2.  Scrambled eggs with cheese and sausage.

3.  Fresh Blueberry pancakes with sausage.

4.  Corned Beef Hash with Fried Eggs and toast with jelly.

5.  French Toast with a side of breakfast meat.

6.  Hamburger Gravy with biscuits.

7.  Waffles topped with fresh fruit.

8.  Breakfast Burritos

9.  Sticky Buns

10.  Oatmeal with Fresh Fruit.

11.  Breakfast Casserole

12.  Ham and Swiss Quiche
