Fresh Guacamole



I was out grocery shopping this past weekend which started as a somewhat bleary day.  I came across some perfectly ripe avocados and couldn't resist.  I didn't even think about grabbing cilantro for my guacamole but I like using it on any kind of Mexican dishes.  It's really a great summer pick especially when it's been in the refrigerator and you want a nice cool snack.  Then as soon as I was about to checkout, I peeked out the front of the store windows and saw nothing but piltering snow falling like crazy.  Yep, we were issued a winter storm warning but I didn't think it would come on that fast.  Thankfully I have 4-wheel drive because it was quite a drive back home on snow covered roads.

My thoughts were I'd just image that I was in a an 80 degree climate, sitting on the dock of the bay at some Bali villa rentals, sipping chocolate margaritas, enjoying my fresh guacamole while watching the sail boats go by.  Unfortunately I'm in a 30 degree climate, sitting in my Pj's, with the heat cranked up, and 6 inches of snow outside!

A girl can dream right?  Anyway, here's how I threw together my guacamole.  I didn't make too much since I'm the only one that eats it around here and I don't recommend freezing it.



Ingredients
2 ripe avocados
1 tsp lime juice
1 small onion chopped
1 small clove of garlic chopped
1 tsp chopped jalapeno
1 small to medium tomato chopped
about 1/2 tsp of sea salt
pepper to taste

Directions
Cut your avocado in half then scoop out seed.  Take a spoon and spoon out your avocado pulp and place in a  medium bowl.  Mash your avocado pulp with a fork then simply fold in all your remaining ingredients together.  Best served fresh.

Enjoy - I served mine with some Tortilla Strip Chips!  Now I'm going to indulge myself and dream about a Bali Villa rent some more while I find a good movie to take the winter blues away.

Peanut Butter, Mayo and Banana Sandwich


I am a Chiquita Mom and wanted to share with you a child hood favorite of mine.  My mom used to make these all the time.  She definitely was an Elvis fan so maybe that's where she got the idea from but these are light and yummy.  I'd love to know if any of you have had this type of sandwich as well!


I used of course delicious Chiquita Bananas sliced, and placed them on sandwich bread where one slice had mayo and the other slice had peanut butter.   I have passed this on to my little one as well and even my husband who had never had a Peanut Butter, Mayo and Banana Sandwich before!

Deer Trail Bologna



This week an Uncle of mine had a deer processed and gave us a couple rings of Deer Trail Bologna and Deer Hamburger meat. I have had deer before but not the Trail Bologna. We ate ours with Ritz type crackers and cheddar cheese and it's yummo. It's actually not as gamey tasting as I thought it would be and from what I've heard the cheese of choice with trail bologna is Swiss.




I'll be the first one to admit that I never even heard of Trail Bologna until I moved to Ohio. Trail Bologna originated out of a little village called Trail Ohio.  It's basically an all beef chunky bologna made from course cuts of meat that's smoked.  The original Troyer's Trail Bologna can only be found in Ohio.  But I gotta tell ya it's pretty darn good.  It reminds me of summer sausage but with it's own unique flavor.

Valentine Breakfast Idea - Heart Biscuits


How about some heart biscuits?  All you'll need is a heart cookie cutter.  I got mine at Alice but I'm sure you can find one right around this time of year at most stores.  You could do this with pancakes as well for the little ones!


I just used refrigerated biscuits so this could work for busy school mornings too!  I served mine with warm Raspberry Pie Filling but strawberries would be yummy too!

Chip Dip for Doritos - Warm Jalapeno Cheddar Dip

Who doesn't like Doritos?  This morning I made this dip and I couldn't wait to share it with you guys.  We are having this along with our Game Day goodies.  This dip goes perfect with Doritos and is quite frugal with only 4 ingredients and can easily be doubled or tripled.  Give it a whirl.


Ingredients
4 oz cream cheese softened
2-4 Tbs of jarred or canned sliced jalapeno peppers, drained and diced up
1-2 Tbs of mayo
1/4-1/2 cup extra sharp cheddar cheese shredded

Directions
Mix all your ingredients together and heat in microwave about 2 minutes.  Stir to mix well, serve warm and enjoy!!!

Amy's Kitchen - Review and Giveaway ENDED

While I had seen Amy's at the grocery store I had never tried her product until just recently.   We decided to do a quick family favorite, pizza.  We chose two kinds - 4 cheese pizza (for the little one) and the Spinach Pizza (for hubs and I) and since it was especially snowy and cold out we also tried a soup - Low Sodium Minestrone.  We found these at our local Giant Eagle store.



We cooked the pizza no different than we would regular frozen pizzas but the difference was that we could actually smell the goodness seeping from the kitchen! It was like food foreplay.  These pizza's were very good and had a lot of great flavor.  I even ate the crust which was just as flavorful!  The 4-cheese pizza ended up being everyone's favorite.  The soup we simply prepared on the stove and Minestrone is one of my favorite Italian soups and Amy's did a fine job! Sometimes you can tell soups were from a can but not this one.  It had great flavor and was plentiful.  Overall we really enjoyed trying Amy's products and from now on I will be on the lookout for them.
