Memorial Day Grillin


I will be laying out my baby back ribs for some fall off the bone BBQ action!  These are always a hit so give them whirl if you have the weather for it.  Or check out my slow grilled BBQ chicken recipe!


Or if you want to surprise them with something spicy, how about some cream cheese stuffed jalapeno's grilled?!  These are awesome.  Or if you want something juicy but a goodie give the grilled tomatoes and mozzarella a shot.

Sausage, Egg , and Cheese on English Muffins - Recipe Swap!

I certainly couldn't miss a week with my ladies in the recipe swap despite how busy it's been around here.  We recently finished a room which included refinishing the floors and are now on to our next project.  In another room we've pulled up carpet and are getting ready to throw a number on that room.  It's amazing how nasty carpet can get and you not even realize it until you pull it up.  No wonder it contributes to allergies.  

Today I got a hunger but for something real quick.  I also wanted extra to freeze for quickie breakfasts/snacks during our room re-do process.  So I made some sausage, egg and cheese (mc)muffins.  I know, I know not much of a recipe right?!  BUT, it is good, fast and sure beats a trip to the big arch.  Here's what I used for mine.

6 eggs scrambled
6 maple sausage patties cooked
6 slices cheese
6 English Muffins

s/p
tad of milk for eggs


I started off with cooking my sausage.  When it was pretty much done, I added the slice of cheese to the top to melt.

When I made my eggs, I didn't scramble them much at all.  I wanted them to be more flat like an omelet so they sit on the muffin well.  Prepare and cook your eggs as you normally would. I added a dash of milk and s/p to mine.

Layer every thing on your English muffin and voila.  Too easy.  Also, I made extra so that I can easily wrap these and freeze them for quickie snacks/breakfasts for when it's too crazy during this next room phase to get in the kitchen and cook.   Just nuke these in the microwave when you get a little hungry!

Addicting Taco Salad - The Bomb!!


This recipe has been around since I was a kid.  I have no idea where it came from other than I got it from my family.  They used to make it for almost every family gathering we had when I was a kid and let me tell you it's been my favorite ever since.  In fact, I get asked to make it all the time here at home!  It's super easy but with all the ingredients involved I normally just make it for special occasions like the Super Bowl, birthdays, or just as a treat to get away from the everyday norm.  Yes, it's addicting.  It's hard to just eat 1, 2, 3, ....dips with your chips and stay away from it.  Give it a whirl and see what you think!


Ingredients
2 - 8oz block of cream cheese - room temperature
1 packet of dried taco seasoning
1/2 cup milk
lettuce chopped
tomato chopped
sliced black olives - 1 can
shredded sharp cheddar cheese or taco cheese - about 3 cups
small jar of taco sauce or salsa
Bag of Tortilla Chips

Directions
Cream(mix) your cream cheese, taco seasoning and milk together into a cream consistency.  Spread on a serving dish (large plate or fairly big flat dish)  and chill for 2 hours.  After, spread 1 bottle of taco sauce over the top of your cream mixture.  Top with lettuce, tomato, cheese, olives and any other favorite ingredients.  Serve with Tortilla Chips and Enjoy!!!

Rise n Shine


Good Morning everyone!  This is one of my favorite ways to do breakfast when I have quite the appetite.  Eggs over easy, grits with butter and some bacon to jump start my day although we normally just do big breakfasts like this on the weekend as school/work mornings tend to be too busy!


I hope you all had a great weekend. A relative brought us over some morel mushrooms that were growing wild in the woods behind his house.  I saw these at the grocery store as well priced for $39.99 a pound!!  They are usually available one time a year and since we've had so much rain they were popping up all over.  I still can't fathom paying that much for mushrooms...can you?  They are good mind you but that good, I guess some would beg to differ. What do you think...have you ever tried them?


On another note I made some pretty spring like cupcakes just for fun. They are in the Snapware container that I reviewed awhile back...I'm still loving that thing.  It keeps them so fresh!  Did you cook up any goodies this weekend?

Zumba!

I've been recently introduced by my Facebook friends to Zumba. Many of my girl friends have taken this class at their local gyms and high schools. When my hold high school friend told me that she went from a size 8 to a size 4 because of Zumba, I was in! However, before I decided to sign up, I researched what Zumba was. It is a dance class that has a touch of Latin style. It works many parts of the body and burns quite a few calories as well. It's offered in groups, which makes it even more fun. Who knew that dancing was exercise? So, I took the chance and signed up. Before I left home, I made sure to set myhomesecurity101.com first. When I got to my Zumba class, I was relieved to see a few familiar faces. Let's just say that that one hour Zumba class was the most fun I've had in a while. Some of the dance moves are funny to do and we all had a great laugh trying to move in the right directions. So, now not only is dancing fun and enjoyable with friends, but I get to get in shape, burn calories and lose weight doing it. Who called exercise boring? This group class is exciting, interesting and something I will continue

A little Wine with that Cheese Please

A few weeks ago hubs and I headed up to Amish country and picked up some oh so delicious cheese at Heini's!  This was actually my first time visiting the cheese shop and I loved it!  They have a but load of different cheeses and many you can sample as you go which was cool. 
There were so many cheeses that there were many we missed in all the excitement.  It's like sticking a kid in a bubble gum store.



Out of all the cheese we picked out my absolute favorite was a chocolate gourmet cream cheese fudge and blueberry cheesecake gourmet cream cheese fudge.  These were out of this world!  I would savor tiny bites I cut off the blocks every night until they were finally gone...yum!!

Other flavors we picked up - marble, raw milk garlic herb,  yogurt cheese and a vegetable cream cheese.

Can you tell I'm a cheese lover?  The vegetable cream cheese was perfect with celery sticks.  I wish I would of had some wine on hand because cheese and crackers with a glass of  Shiraz would of been right up my alley.

Creamy Pea Salad - Recipe Swap

I haven't had much cooking time lately with the next room we are re-doing.  I've been hoping for some great grilling weather but seems rain it is.  Here's a quickie I like to have when I'm super busy.  Note - if you don't like peas then you definitely won't be interested.  Hubs doesn't like peas as a dish, focal point or other.  He will only eat them if they are camouflaged like in a beef stew where he can barely taste them or see them.  So he doesn't eat this but I sure do - all of it - all by myself - (separate meals of course)!!


Ingredients for the Salad
1 can of peas drained (15 oz) or use frozen but I don't particularly like frozen peas
1 cup shredded sharp cheddar cheese or whatever you like
2 tsp of minced onion - or more to taste
about 3 slices of cooked crumbled bacon (ham would work too)
Basic Dressing
1/2 cup mayo (or miracle whip)
2 tsp sugar
2 tsp milk

s/p to taste

Possible add ins - Pasta, eggs, broccoli instead of peas in which case I like red onion.


Mix your dressing in a medium sized bowl.  Then add in your remaining ingredients and stir to coat everything nicely in the dressing.  Cover to chill in the refrigerator.  If your like me I go ahead and munch on some - I'm impatient.
